Hanoi street food: Doughnut in Vietnamese style, have you ever tried?

For many foreign visitors, Doughnut is not a strange dessert. However, in each country, each method of cooking Doughnut is different. So does in Vietnam. Unlike the other countries, the Doughnut of Vietnam has a private name: Glutinous rice doughnut. Glutinous rice doughnut, or “Banh Ran” in Vietnamese, has been a famous sidewalk snack food for many centuries.

Ⅰ. The variety of Glutinous rice doughnut:

Glutnious rice doughnut has 3 main kinds which are very delicious and certainly satisfy gourmets around the world.

Banh Ran Man:

-   Ingredients:

+) Wet glutinous rice flour.

+) Ground meat (usually pork).

+) Vermicelli.

+) Green papaya, carrot.

+) Lettuce, herbs, wood ear mushroom.

+) Dried onion and garlic, pepper.

+) Fish sauce, sugar, vinegar.

-  Cooking method:

+) Soak the Wood ear mushroom and vermicelli, then chop both of them. Peel dried onion’s skin, ground it. Mix these ingredients with ground meat, pepper and seasoning in order to make the cake’s filling.

+) Divide glutinous rice flour into small balls but having same size. Squeeze these balls and ladle a spoon of filling in the middle for each rice ball. Rub until the filling is covered by flour, then make elastic shape for the cake.

Banh ran man

+) Peel the green papaya with carrot, slide into thin pieces. Squeeze with salt and wash again with boiled water. Wait until it cool and mix with sugar, vinegar and fish sauce.

+) Make the sauce with water, sugar, vinegar, fish sauce and garlic.

+) After that, fry glutinous rice doughnut until its crust become crispy. Take it out, put into oil-absorbent papers and enjoy.

Banh Ran Ngot:

-   Ingredients:

+) Coconut.

+) Glutinous rice flour.

+) Water.

+) Cooking oil.

+) Sugar.

-  Cooking method:

 

+) Mix all ingredients in a big bowl until it become soft. The method of making cake’s crust is the same with “Banh Ran Man”.

+) Heat the oil. Put all cake into and fry.

+) Heat the mixture of sugar and water in the pan until the sugar is completely dissolved. Put the doughnut into to fry together.

Banh Ran Luc Lac:

-  Ingredients:

+) Glutinous rice flour.

+) Sugar.

+) Green peas (must be cleaned the shell).

+) Water.

+) Sesame.

+) Cooking oil.

+) Baking powder.

+) Coconut.

- Cooking method:

+) Soak green peas with water in 3 hours, then boil in 15 minutes and crush before mixing with sugar, coconut and cooking oil.

Banh ran luc lac

+) Divide green peas into equal parts, then round each part.

+) Mix glutious rice flour with baking powder, green peas, sugar and cooking oil. Pour the water gradually and kneat it until it is not sticky or lump.

+) Knead the dough into a block, leave it in about 2 hours. After that, divine the dough into small balls.

+) Squeeze the rice balls and put green peas in the middle.

+) Roll over the rice balls under sesame.

+) Fry the cake.
